Warcraft Cooking IRL: Suramar Surf and Turf, Azshari Salad, Cookbook Giveaway

Serves 2-4 people

Difficulty: Easy

Dressing Makes 1 Cup

Ingredients

10-14 Shrimp (Tail on)

1 lb. skirt steak

For the Dressing/Marinade

3 oz Red Wine Vinegar

1 teaspoon Dijon Mustard

1 Tablespoon lime juice

½ Cup Cilantro, Whole

2 Cloves of Garlic

¼ teaspoon Grated Fresh Ginger

½ Cup Olive oil

¼ Teaspoon Honey

Salt and Pepper to taste

For the salad base

1 ½ Cups Spinach

2 Cups Romaine lettuce, chopped

½ Cup Grape Tomatoes cut in half (Or large dice some roma tomatoes)

¼ Cup Red Onion, Cut into half moons

Croutons of Choice

Directions: Making the Dressing

Take all ingredients for the dressing and blend them together until smooth.

Take ½ cup of the dressing mix and use it to marinate skirt steak and shrimp (1/4 cup each) in the fridge for about 45 minutes (The longer the better. Make this ahead of time for convenience).

Cooking the Shrimp and Steak:

Season with salt and pepper. Cook the shrimp and skirt steak on a grill or skillet with 2 Tablespoons of olive oil. Cook skirt steak to medium doneness. Allow shrimp and skirt steak to cool down completely.

Assembling the Salad

Mix salad base together with ¼ (OR LESS) cup of dressing and coat all the lettuce and veg. Season your salad with salt and pepper.

Add steak and shrimp, serve.

Tip:

Dress the lettuce right before serving to keep leaves from getting soggy so soon.

Ingredients

1 ½ lbs. skirt steak

¼ lbs. tail on shrimp raw, deveined, cleaned

¼ lbs. sea scallops, cleaned

½ Cup Marinade (See above for recipe)

6 Tablespoons Olive Oil (2T x 3)

½ Cup Chopped Asparagus

¼ cup chopped shallots

2 Cloves of Garlic, minced

1 oz. White wine, or 2 teaspoons lemon juice

1 Cup Heavy cream

¼ cup Cheddar Cheese, shredded

Pinch of Paprika, and red pepper flakes

Salt and Pepper to taste

Parmesan cheese, shredded for garnish

Parsley, chopped for garnish

Toasted sliced French bread, for garnish

Directions

Cover the skirt steak in ½ cup of marinade from the Azshari Salad Recipe. Marinate skirt steak while you are preparing the seafood.

Season shrimp and scallops with salt and pepper. Heat a nonstick fry pan to medium heat and add 2 Tablespoons of olive oil to pan. Cook scallops and shrimp until just cooked. About 3-4 Minutes. Flip shrimp and scallops over at the halfway mark. Cooking times vary with size. Take off skillet and set aside

Take the same skillet and add 2 Tablespoons of olive oil into pan on medium heat. Sauté the chopped asparagus on medium heat for 2 minutes. Add in shallots and garlic and cook for an additional minute.

Add white wine or lemon juice, stir around for 1 minute. Change heat to low and add heavy cream. Mix.

Add paprika and red pepper flakes. Let simmer on low heat for 1 minute.

Mix in shredded cheese and let melt. Season with salt and pepper until satisfactory. Turn off heat and set aside pan.

On medium heat, add 2 Tablespoons of olive oil to a new sauté pan and cook skirt steak until you reach desired doneness. Let rest 5-8 minutes. Set aside.

Grab cream sauce and place back on medium heat. Add a splash of water and heat till it simmers. Add in shrimp and scallops and bring heat to low. Let simmer for 1 more minute.

Cut skirt steak into strips, place strips on plate in a fan. Place a slice of toasted French bread next to skirt steak. Top toast with seafood cream sauce. Top seafood with parmesan cheese and parsley. Serve with a starch (like potato, rice, or pasta) and enjoy!

Tips:

Marinate the skirt steak ahead of time for 2 hours if possible for best flavor.

Grilling the skirt steak is preferred.
