First off, I read your entire post and it was actually very interesting, since I never really bothered to learn about engineering in-game.
About the profit, and how it compares to other proffesions, I see how engineering falls behind, since there is no obvious and much-wanted thing that you could easily farm and sell for money, as opposed to i.e. Leatherworking (kits, armor), and I can see how that is really frustrating when you need a little more cash for something. I think many people think of engrineering as a non-profitable-but-very-much-fun proffesion, and since so many care only for their wallet, engi is often forgotten because people want money and whatever stat boost the given prof. brings with it.
Engineering is with no doubt the proffesion with the best potential of making the game more fun, but it isn't that desired for pure numbers on a sheet (and since this game more and more turns into world of mathcraft, it actually becomes important).
Now what Blizzard did with almost every other proffesion was to give it something unique, a BOP effect for the player, but also something that is easily sold on the AH, since everyone needs it (like legg kits from LW, eternal belt buckle etc.), making the proffesion highly wanted because of the fact that people really needed what it supplies. With engineering, its not like that, since people really dont care for anything that comes from engineering. So something I think would have been a good idea is something like this:
An enchant designed for trinkets, with powerful enough stats to make players spend money on it from the AH, so engi could go farm the mats and sell it for an income.
Yay or nay?
Anyway, you got a point, and it is no wonder that your friends / guildies abandoned engi and picked up something else considering the state it is in.

You can sell the epic level 80 guns for 2-3x the price of their mats easily.
You can farm Crystallized Air, Water, Fire very easily.
Why in the world would you take away bullets, that's absolutely ridiculous. Any 80 hunter should be using engineer crafted ammunition, and hunters aren't exactly a rare class. I'm a mining/engineering Hunter, and I get a little more use out of engineering than non-hunter classes, but there's still plenty of reasons to have it. Between the ammo I can make for myself and my guild, the repair bots I make for myself and anybody I'm partied with, all the elements I can farm with the mote gatherer, and the insane profits on the guns, I'm pretty happy with engineering. As for tinkering, awesome for pvp, extra damage for pve, and some just fun stuff.
Don't like it? Drop it and pick another, nobody is forcing you to keep it. I love engineering, and I didn't pick it because I want to make massive amounts of money. I picked it because it's fun and practical.

I guess I just don't hold the viewpoint that all professions need to be "equal", each serves a different purpose. For my purposes, which are practical, and not for RPing or profit, it works very well.

Yee, it sucks. I have never been a real enginner but i can sympthize with this cause. I got my main with alchemy, but i always secretly wanted to be an enginner, so i did half fun gear up an alt who is lvl 74 now. Loved the Sheep bombs! The flares was kinda cool also, and in northrend you will get gnomish ray googles(Bit pervy i know).
But lately i have noticed they seems to give enginner a wallop and kick its core arse. Enginner was never meant as a money proffesions, i can accept that. But before it had some advantages in arena/bg and alot of fun effects who compensated for that. It wasn't really OP, saying that is damn lying. Enginner just had some few tricks who may had worked, but always had a big chance to back fire.
Sadly blizz as pointed out seems to gotten some screw lose(Quick brothers, lets use the wrench and screw it back again) and deciding enginners needs to die. It was one of the few proffesions who made wow unique, it gave the game un predicability(spell wrong i know).
My suggestions:
-There is alot of gadget from vanilla who is outdated, perhaps make updated versions on them?
- Make new schematics drop in ulduar.
- Add more fun effect.
- Make it so enginners can instead of having enchants with stats on instead of use only. Like you can have an Enchanting enchant on the cloak but still have the slowfall use effect(meaning you nerf away the stats you gain with slowfall enginner enchants who is 12 agility i think it was). This would not be totally unjustified, with the meaning it is more a save effect.
